Where do we get information about the size of Cube on the TM1 Server

Many ways:
Select the Cubes item. The RAM footprint of the cube is over on the right. You can click on the column heading to sort.
Run Performance Monitor, and look at }StatsbyCube. This gives you more detail about what is using the RAM ie input data, feeders, etc.
To find the disc footprint of the cube, look in the server directory - maybe I'm being a bit too obvious here

In the Server Explorer, Click on the Cubes and then in the Properties Window it will tell you the size of the cubes.

As far as I am aware that is the size upon load. It doesn't tell you the actual cube size including cache and updates,

We have found this list also includes cubes that are flagged to load on demand.
So they should not be consuming any RAM? Or at least very little?

I think any detailed analysis on RAM, as you suggest, should be done using
performance monitor. It will give you quite granular breakdown. ROT is that TM1, to date, does not give back any memory once it takes it from the OS.
