Hi,
Is it possible to change the 'TM1' name in the TM1 toolbar? i.e. have 'my application' appear instead of 'TM1'?

'TM1' name in the TM1 toolbar is set through the TM1 add-on which comes with TM1.
There is no built-in option in TM1 which allows you to change it.
You may be able to change it if you can hack into tm1pRibbonX.xlam file
